When Life Hands You Lemons......

By Bea McManis

....you should make lemon chicken.   I forgot that for a few short weeks.    Today, my outlook is totally different.  The forces that caused the drama are now gone (literally).

Lemon Chicken

1 (4 pound) whole chicken, cut into pieces

4 lemons, halved

6 cloves garlic, minced

1 tablespoon curry powder

salt and pepper to taste

Directions

1.Preheat oven to 350 degrees F.

2.Place chicken pieces in a 9x13 inch baking dish. Squeeze lemon halves over the chicken, then sprinkle with the garlic, curry powder and salt and pepper to taste.

3.Bake at 350 degrees F  for 1 hour or until chicken is cooked through and juices run clear.

Enjoy!

lol, Kevin.
Never thought about it like that, but you 100% right.
I love lemons, so I should be thankful when they come into my life, even the ones that come in the guise of life's speed bumps.
Sadly, one of those speed bumps could have been very costly. I had to ask someone, I once trusted, to resign from the Snack Shop. This person was storing some of the products away from our storage area and it had to be placed in that area after the resignation.
I went to take something out of that area today and found that the area was never locked. The door was wide open and the products available to anyone else who uses that area.
Lesson learned and lemonade chilling in the fridge.
